Selection of the “Golden” Lotus : Our journey begins with the Premium Xianglian (Hunan Lotus Seeds), harvested from the pristine waters of central China. Each seed undergoes a strict Manual Culling Process to ensure uniform size and the removal of the bitter “heart” (embryo), leaving only the starch-rich, nutty core that provides our paste’s foundational sweetness.
The Art of Hydration & Peeling : Utilizing controlled Cold-Water Hydration, the seeds are softened to preserve their natural proteins. Unlike industrial mass-production, our Traditional Decortication Method ensures the thin red skin is removed without damaging the seed’s integrity, resulting in the iconic “White Lotus” clarity.
Traditional Copper Wok Stirring : The true transformation happens in our custom-made Solid Copper Woks. Copper provides superior thermal conductivity, allowing for precise temperature control. Under the watchful eye of our master craftsmen, the lotus mash is slow-cooked through Constant Manual Agitation, preventing caramelization while achieving a molecularly smooth texture that machinery simply cannot replicate.
The Golden Ratio of Pure Peanut Oil : We reject lard or cheap vegetable oils. Instead, we incorporate First-Press Pure Peanut Oil and high-grade maltose. This “Golden Ratio” infusion creates a chemically stable emulsion that yields a glossy, amber finish and a lingering nutty aroma that is the hallmark of a true Intangible Cultural Heritage product.
